Hungry? No time to cook? Need another healthy, easy dinner? I love this recipe because you can make this in a few minutes and you can vary this in so many ways. Let’s start with the basic recipe and then I’ll give you some ways to switch it up!

7 Layer Dip Easy Dinner

1 lb. grass-fed hormone-free lean ground beef, thoroughly cooked
1 15 oz. can organic refried beans
Shredded organic Mozzarella or Pepper Jack cheese (as much or as little as you like)
1 large tomato (or 2 med tomatoes), diced
1 small onion, diced (or 3/4 cup of green onions)
2 avocados, sliced
1/4 fresh organic cilantro
Dollop of plain full-fat yogurt, or organic sour cream (optional)
Serve with organic blue corn chips

Now the variations:
Use ground turkey in place of ground beef
Omit the beef/turkey and use another type of bean for that layer
Use black beans in place of refried beans
Spice up the meat with chili powder

You can heat up this dish in the oven at 350 degrees for about 20 minutes to heat through. Or you can serve this dish cold. You can double the recipe for leftovers!
