I am always looking for great-tasting recipes. I found this recipe on www.Epicurious.com and modified it for just the two of us. The original recipe is for 6 servings so you can increase the quantities as needed. My husband and I both agree this is our new favorite salmon recipe.
2 (6 oz) pieces center-cut salmon fillets (about 1″ thick) with skin
1 tsp. finely grated fresh lime zest
2 Tbsp. lime butter sauce
Lime Butter Sauce
1 large garlic clove, smashed and chopped
2 Tbsp fresh lime juice
1/4 tsp black pepper
1/4 cup (1/2 stick) unsalted butter, melted
Prepare the lime butter sauce first. Add the garlic, lime juice and black pepper to the blender. With blender running, add melted butter slowing and blend until emulsified, about 30 seconds.
Season the salmon with the pepper. Preheat the grill. My husband Bill has perfected this grilling. He covers an old pan with foil — outside and inside (outside so it doesn’t ruin the pan, and inside to make for an easy clean-up).
Add about 1 Tbsp of olive oil to cover the inside bottom. Then add about 4 oz. (1/4 cup) of water. Add the seasoned salmon, skin side down. Cover the top with foil, and put on upper rack of grill for 20-22 minutes, depending on thickness of salmon. No need to turn the salmon cooking it this way. Test with fork to make sure salmon is done. Remove from grill.
Sprinkle fillets with zest and top each with 1 Tbsp. of the lime butter sauce. Serve and enjoy.
