Looking for an easy dinner filled with protein? Grab your crock pot and some chicken!

One way to beat those low energy blues is to making sure that you have enough protein in your day.  If your day is busy from early morning until evening, having to prepare something for dinner after a long day can be even more exhausting.

So make it easy on yourself. Simply throw in some chicken breasts into your crock pot.

 Easy shredded chicken

2 skinless, boneless chicken breasts
3/4 cup low-sodium
Add black pepper
Add any other seasonings you like (chili pepper, Bragg’s organic Sprinkle)

Add all ingredients to crock pot. Set for 6 hours on high or 8 hours on low (depending on how long you’ll be gone).

When finished cooking, remove the chicken and shred. Add back into crock pot and mix with broth. Enjoy for dinner and save any leftovers for lunches!

If you have several mouths to feed, or want leftovers, simply double the recipe.

By keeping shredded chicken in the refrigerator, you can always create a fast, nutritious meal or snack.  Think of the possibilities:

Healthy meal tip: When preparing meals, make sure to have about 1/3 protein, 1/3 dark green veggies, 1/3 starchy vegetable or grains, and 1-2 Tablespoons of healthy fat. Those proportions will give you the optimum nutrition for your meal.
